Hainan ndi chigawo chokhacho cha China chomwe chili konsekonse m’dera lotentha, kum’mwera kwa tropic ya Cancer.
- Kutalika kwa minda ya tiyi: Kuyambira panyanja mpaka 500–800 m; minda yayikulu ili m’mapiri ndi zitunda za pakati ndi kum’mwera kwa chilumba (Wuzhishan, Baisha, Qiongzhong) komanso m’mphepete mwa nyanja (Wanning).
- Nyengo: Monsoon ya dera lotentha. Kutentha kwapakati pachaka 22–26°C. Nyengo ya chisanu sichipezeka — chaka chonse. Mvula yapachaka 1500–2500 mm. Chinyezi chachikulu (>80%) ndi mvula yochuluka mu May–October. 5. Ukadaulo wa Kupanga:
Ukadaulo umapangidwa ndi magawo awiri: kupanga maziko a tiyi wofiyira ndipo kenaka kuwonunkhira ndi chomera chachilengedwe cha vanila. Gawo I — Kupanga maziko a tiyi wofiyira:
- Kututa (采摘 — cǎizhāi): Sproot imodzi ndi masamba amodzi kapena awiri.
- Kufota (萎凋 — wěidiāo): Kuchepetsa kukhuthala kwa masamba mpaka pokhala pothina; m’dera lotentha la Hainan, gawo ili litha kukhala lalifupi kuposa m’maboma a kumtunda chifukwa cha kutentha kwakukulu kwa mpweya.
- Kupota (揉捻 — róuniǎn): Kuphwanya makoma a maselo ndikutulutsa madzi pamtunda kuti pakhale oxidation yolingana.
- Kuwotcha / kufiira (发酵 — fājiào): Kufiira konse mpaka kufika pa mtundu wofiyira wamkuwa ndi fungo la zipatso ndi lotsekemera la tiyi wofiyira.
- Kuyanika (干燥 — gānzào): Kuletsa oxidation, kukhazikitsa fungo loyambirira.
- Kusanja (分级 — fēnjí): Kusankha kagawo koyenera kowonunkhira.
Gawo II — Kuonunkhira ndi chomera cha vanila:
- Kukonza zopangira vanila: Nyemba za vanila zofiira (Vanilla planifolia) zili ndi zinthu zopitira 200 zopangira fungo ndi bioaktive. Zinthuzi zimatengedwa mwa njira yochotsera ndi kukhazikitsa — chomera cha vanila (tincture kapena oleoresin) chimapezeka, chomwe chili ndi vanillin, vanillic acid, vanillyl alcohol, acetovanillone, cinnamic acid ndi zina zambiring’i.
- Kutenga (吸附, xīfù): Tiyi wokonzeka amapangidwa ndi chomera cha vanila potsatira ukadaulo wozikidwa pa chiphunzitso chamakono cha adsorption: tsamba la tiyi limakhala ngati chotengera chobowoka, chomwe chimamwa ma molecule a fungo. Njirayi imachitika pansi pa kuwunika kwa kutentha ndi chinyezi kuti fungo lifalikire mofanana.
- Kukhazikitsa ndi kukonza: Pambuyo pa adsorption, tiyi amayanikidwanso kuti fungo likhazikike ndipo chinyezi chichepetseko.
6. Makhalidwe a Malingaliro:
- Maonekedwe a masamba ouma: Kupota kwapakati kapena kochepa; mtundu wofiirira wakuda wokhala ndi kuthwanima kwachilengedwe. M’magawo apamwamba, zikomo zagolide zowoneka. Kunja kwake, ndi tiyi wofiyira wabwino wamba.
- Fungo la masamba ouma: Lowala, losazolowereka: patsogolo pake, vanila yoyera, yotsekemera, kutsatiridwa ndi kumveka kwa mafuta a todi ndi kakang’ono ka chokoleti. Mizu ya tiyi wofiyira (chimera, zipatso zouma) imapanga maziko akuya.
- Fungo la mkaka: Lophatikizana ndi lokhalitsa: vanila yotentha yotsekemera, chokoleti cha mkaka, todi, zonona. Pamene ukuphola kumawonekera mafungo a zipatso ndi maluwa a maziko a tiyi. Fungo limakhalapo pa nthawi zopitirira zitatu kapena zambiri zakulowetsa.
- Kukoma: Kochuluka, kozungulira, lokhala ndi kutsekemera kwakukulu ndi kukoma kwapang’ono. Gawo la vanila limawonjezera kutsetsereka kwachilengedwe ndi kutsekemera kwa todi, osaphimba makhalidwe a tiyi. Kumveka kutsekemera kwa kubwerera (回甘, huígān). Amachita makamaka bwino ndi mkaka — mutu wa vanila ndi zonona umapita patsogolo momveka bwino. Monga chakumwa chozizira chowonjezeredwa madzi oundana — chotsitsimula ndi cha dessert.
- Mtundu wa mkaka: Wofiyira kwambiri, wonyezimira ndi wowala. Pakakhala mkaka wothina — rubi wokhala ndi kuwala kwa amber.
- Pansi pa tiyi (tsamba lophikidwa): Wofiyira mkuwa, wosinthasintha. M’magawo apamwamba, masamba ali athunthu ndi ofanana.
7. Zili m’kati mwake:
Zili m’kati mwa Tiyi Wofiyira wa Vanila zimapangidwa ndi zigawo za maziko a tiyi ndi chomera cha vanila.
- Polifenoli (kuchokera ku maziko a tiyi): Theaflavins ndi thearubigins, zopangidwa panthawi ya kufiira konse kwa masamba akuluakulu. Zimapanga thupi, mtundu ndi mphamvu ya antioxidant ya mkaka.
- Amino acids: L-theanine (kuchokera mu tiyi) + 17 ma amino acids ofunikira osapezeka m’ma chakudya (kuchokera ku chomera cha vanila, malinga ndi kusanthula kwa mankhwala kwa nyemba za Vanilla planifolia).
- Alkaloidi: Caffeine (kuchokera ku maziko a tiyi) — mphamvu yolimbikitsa; theobromine ndi theophylline — m’miyeso yaying’ono kwambiri.
- Zinthu za vanila (kuchokera ku chomera): Vanillin (香兰素, xiānglán sù) — aldehyde yofunika kwambiri yopangira fungo (2–3% ya misa youma ya nyemba zofiira); vanillic acid; vanillyl alcohol; acetovanillone; 4-hydroxybenzaldehyde; cinnamic acid ndi cinnamic alcohol; guaiacol; anisic aldehyde ndi anisic alcohol — komanso zina zambiri zing’onozing’ono, zomwe zimapanga fungo lakukwanira la vanila, lomwe silingasiyanitse ndi fungo la nyemba zonse zofiira.
- Mavitamini: Vitamini C, mavitamini B1, B2, vitamini E (kuchokera ku maziko a tiyi).
- Zinthu zamchere: Potaziyamu, magineziyamu, calcium, manganese, zinki.
- Mafuta onunkhira: Kuphatikiza kwa terpenoidi za tiyi (linalool, geraniol) ndi zinthu zopangira fungo za vanila, zomwe zimapanga bukhu lachilendo la “hybrid”.
8. Ubwino pa Thanzi:

9. Kuphikira:
- Kutentha kwa madzi: 90–95°C. Pamagawo apamwamba a masamba — 85–90°C.
- Mlingo wa tiyi: 4–5 g pa 100–120 ml (njira ya gongfu); 2–3 g pa 200–250 ml (kapu kapena m’ketulo).
- Zoyeretsera: Gaiwan yadothi (盖碗) kapena m’ketulo yadothi; galasi limalola kuyamikira mtundu wofiira kwambiri wa mkaka. Zida zadothi sizolimbikitsidwa — dothi lobowoka lingamwe fungo la vanila ndikusokoneza kupikira tiyi wina mtsogolo.
- Ndondomeko:
- Tenthetsani chida ndi madzi otentha ndikutaya madziwo.
- Ikani tiyi ndipo muzipumira fungo lake — funde la vanila ndi chokoleti limamveka kale kuchokera ku masamba ouma.
- Kutsuka (ngati mukufuna): kuthira mwachangu kwa masekondi 1–2.
- Kuthira koyamba: 8–15 masekondi.

- Malangizo apadera: Tiyi Wofiyira wa Vanila amakhala wabwino kwambiri ngati maziko a tiyi ndi mkaka (奶茶, nǎichá) — mawonekedwe a vanila ndi todi amagwirizana bwino ndi zonona. Komanso amayenda bwino ngati njira yophikira chozizira (cold brew) ndi ngati tiyi woipa (冰红茶, bīng hóngchá): thirani mkaka wothina pa madzi oundana — mudzapeza chakumwa chotsitsimula cha dessert.
10. Kusunga:
Chotengera chosasunthika chosayang’ana (thumba la zitsulo, bokosi lachitsulo), kutetezedwa ku kuwala, chinyezi ndi mafungo akunja. Kutentha — 10–25°C. Tiyi onunkhira amakhala osavomerezeka kuti ataye fungo lawo, choncho nthawi yabwino yogwiritsira ntchito ndi miyezi 12–18 pambuyo pa kupangidwa. Osasunga pafupi ndi zakudya zonunkhira mwamphamvu. Pakangotsegulidwa, womwe asungidwe — gwiritsani ntchito mkati mwa miyezi 1–2 kuti musunge fungo lonse la vanila.
11. Mtengo ndi Zonyenga:
Mtengo umatengera ubwino wa maziko a tiyi, mtundu wa chomera cha vanila (chachilengedwe motsutsana ndi vanillin yopangidwa) ndi mtundu wa opanga. Vanila wachilengedwe ndi imodzi mwa zonunkhira zodula kwambiri padziko lapansi (mtengo wa nyemba zofiira umafika madola 500–600 pa kilogalamu pazaka zapamwamba), zomwe zimakhudza mtengo wa Tiyi Wofiyira wa Vanila weniweni wokhala ndi chomera chachilengedwe.
- M’mene mungapewere zonyenga:
- Yang’anani chiyambi: Tiyi Wofiyira wa Vanila weniweni amapangidwa ku Hainan kuchokera ku zopangira zakomweko. Yang’anani chigawo ndi dera pa phukusi.
- Onaninso fungo: chomera chachilengedwe cha vanila chimapereka fungo lovuta, lophatikizana, lokhala ndi maziko a chokoleti ndi todi ndi ma toni ambiri owonjezera; vanillin yopangidwa imakhala yosalala, yotsekemera mbali imodzi, ngati “za confectionery”, osati yozama.
- Mkaka umayenera kukhala woyera, wonyezimira, wofiira kwambiri; mkaka wosalalikira kapena wotuwa ndi chizindikiro cha maziko otsika.
- Kukoma: tiyi weniweni amasunga bwino makhalidwe ake onse awiri — a tiyi ndi a vanila; ngati vanila “iphimba” tiyi kwathunthu kapena kumveka kukoma kopangidwa modetsa nkhawa — mwinamwake agwiritsa ntchito wonunkhira wopangidwa.
- Chenjerani ndi mitengo yotsika kwambiri: chomera chachilengedwe cha vanila ndi chodula, ndipo Tiyi Wofiyira wa Vanila wabwino sangagwire mtengo wofanana ndi wamba wa tiyi wonunkhira.
12. Zinthu Zochititsa Chidwi:
