- Kutentha komaliza / “fù bèi” (复焙 — fù bèi): Kuumitsa komaliza pa 60°C — komwe kumatchedwa “moto wamphamvu” (打老火, dǎ lǎo huǒ). Tiyi atawumitsidwa bwino, akadali wotentha, amalongedza m’mitsuko yachitsulo, yokutidwa ndi masamba a bamboo (箬叶, ruò yè) kuti atetezedwe ku chinyezi ndi fungo lachilendo.
- Kusanja (分级 — fēnjí): Tiyi womaliza amasanjidwa pamanja malinga ndi kukula, mawonekedwe ndi ubwino.
6. Makhalidwe Olawirika:
- Mawonekedwe a tsamba louma: Aakulu kwambiri (5–7 cm, masamba ena mpaka 10 cm), ophwanyika, oongoka, masamba osawonongeka a mawonekedwe “masamba awiri akukumbatira kamphukira.” Mwambi wodziwika: “Pa Hóu Kuí malekezero onse ndi akuthwa, saswedwa, sapindika, sapindika m’mphepete” (猴魁两头尖,不散不翘不卷边). Lodzaza ndi lolimba (醇厚, chún hòu), koma lofewa, lopanda mwano — “lodzaza popanda kuwawa, lolimba ndi khalidwe” (浓而不苦,醇而有味). - Mtundu wa madzi: Wobiriwira wosakhwima, woyera, wowala, wokhala ndi kuwala kowala (清绿明澈, qīng lǜ míng chè). Mtundu wake ngati wa apulo wobiriwira. Mtundu wake umakhazikika, susanduka chikasu kapena kufiira akazizira.
- Chitsime cha tiyi (tsamba lophikidwa): Aakulu, athunthu, akhuthala, masamba osunthika a mtundu wobiriwira wosakhwima (嫩绿匀亮, nèn lǜ jūn liàng), akutambasuka bwino.
