6. Makhalidwe a Kumverera:
- Tsamba lowuma: Lolongosoka, lopanda fumbi; m’magulu apamwamba, tsitsi la mphukira limawoneka.
- Kununkhira: Maluwa oyera, udzu watsopano, uchi wopepuka; m’magulu a masamba ochuluka — mawonekedwe a udzu ndi khungwa la zipatso.
- Kukoma: Kofewa, kotsekemera, ndi zowawa pang’ono pamene madzi atenthedwa kwambiri.
- Kumwa: Koyera, ngati mtambo wa udzu, nthawi zina wagolide.

7. Zomwe Zili M’thupi:

8. Ubwino pa Thanzi:
Tiyi woyera nthawi zambiri amatengedwa ngati chakumwa chokhala ndi mphamvu yochepetsera kutopa yofewa ndi kuchuluka kwa ma antioxidant. Komabe, tiyi si mankhwala, ndipo zotsatira zilizonse za “mankhwala” zochokera m’mafotokozedwe otsatsa ziyenera kuonedwa mwatsatanetsatane.
Ubwino womwe ungakhale wofunika (mwa kumwa mwanzeru):

9. Kuthira:

Kutentha kwa madzi: 75–90 °C (pamene pali mphukira zambiri ndi “kufewa” — kutentha kumakhala kochepa).

Muyeso: 4–6 g pa 150–200 ml kwa gaiwan / kazitini; kwa kapu mukhoza 2–3 g pa 200–250 ml.

Kuthira: yambani ndi masekondi 10–20, kenaka onjezerani nthawi pang’onopang’ono. Tiyi woyera wabwino amatha kupirira kuthira 5–8.

Zida: porcelain / galasi. Galasi ndi labwino ngati mukufuna kuwona kutseguka kwa tsamba.

Chowonjezera: tiyi woyera “amakonda mpweya” — musaope kutsegula tsamba louma kwa kanthawi mu gaiwan yotenthetsedwa tisanayambe kuthira koyamba.
**Upangiri:** kwa tiyi wa Sangzhi woyera, nthawi zambiri kutentha "kwapakati" 80–85 °C kumagwira bwino — kumasunga kununkhira ndikupereka kutsekemera kokwanira.
10. Kusunga:
Tiyi woyera amakhudzidwa ndi chinyezi ndi fungo lachilendo.

Chidebe: chotseka bwino (mtsuko, thumba la zip-lock / thumba la zojambulazo), popanda zipangizo “zonunkhira”.
-
Malo: owuma, ozizira, amdima, osasintha kutentha.
-
Kuyandikana: kutali ndi zonunkhira, khofi, zofukiza.
-
Firiji: ndi kotheka kwa magulu osalimba kwambiri (makamaka okhala ndi mphukira zambiri), koma pokhapokha ngati chidebecho chili chotseka bwino kwambiri, apo ayi tiyi amatenga msanga fungo ndi chinyezi.
**Ngati mukukhala m'malo achinyezi:** sungani tiyi woyera m'chidebe chotsekeka kwambiri ndipo gwiritsani ntchito chowumitsa chinyezi (m'thumba lapadera, osagwirizana ndi tiyi).
11. Mtengo ndi Zobisala:

- kupanga fungo (ngati tiyi amanunkhira ngati “mafuta onunkhira”, vanila, kapena zipatso zowala — izi ndi chifukwa chokayikira);
- kuyanika mopitilira / kuwotcha mopitilira (amabisa zolakwika za zipangizo, amapereka zokoma zowotcha ndi kusweka);
- nthano zotsatsa m’malo mwa deta yomveka: chaka cha kutolera, dera, mtundu wa chitsamba, luso.
Zomwe zimathandiza posankha:
- deta yomveka ya zipangizo ndi dera;
- tsamba louma lathunthu, lopanda fumbi ndi zidutswa;
- kununkhira koyera kopanda fungo lakale kapena “la pansi” (kwa tiyi wakale — kuvomerezeka kwa mawonekedwe ofewa a nkhuni ndi udzu, koma osati nkhungu).
12. Zochititsa Chidwi:

Udindo wa chizindikiro cha malo kwa «桑植白茶» umathandiza dera kumanga chidziwitso ndi kuthana ndi zabodza, koma khalidwe lomaliza limatsimikiziridwa ndi zipangizo ndi kukonza.

Sangzhi ndi malo osangalatsa kwa iwo omwe akufuna kuyesa tiyi woyera kutali ndi Fujian ndi kumverera momwe luso limasinthira m’nyengo ina.

Njira yabwino yodziwira kalembedwe ndi kuyesa magulu awiri: la mphukira ndi masamba (mtundu wa Bái Mǔ Dān) ndi la masamba ochuluka (mtundu wa Shòu Méi).

- Kutentha kochepa kwa tiyi wakale ndi wokanikizidwa: mosiyana, tiyi wakale woyera ndi wokanikizidwa kolimba nthawi zambiri amafuna 95–100 °C, apo ayi kukoma kumakhala kochepa.
- Kusunga pafupi ndi fungo: tiyi woyera amatenga msanga fungo la khitchini, zonunkhira, ndi mankhwala apakhomo.
- Kusokoneza “watsopano vs wakale”: kuyembekezera kuti tiyi wakale wa “masamba a m’chisanu” — ndi cholakwika; ubwino wake ndi uchi, zipatso zouma, ndi kukhuthala kofewa.
Ngati kukoma kumawoneka kopanda kanthu — yesani:
- onjezerani muyeso ndi 1–2 g;

Tiyi woyera ndi umodzi mwa tiyi ochepa a ku China omwe amapezeka kwambiri m’mawonekedwe osalala komanso okanikizidwa (ma pancake, njerwa).
Chifukwa chiyani amakanikizira tiyi woyera
- Ubwino wa kusunga ndi kunyamula: malo ochepa, tizidutswa tochepa.
- Kukalamba kofanana: mu kukanikizidwa, tiyi amakalamba pang’onopang’ono ndipo nthawi zambiri amakhala “wosonkhanitsidwa” bwino, chifukwa tsamba limakhudzidwa pang’ono ndi mpweya.
- Kukoma: kukanikizidwa nthawi zambiri kumakhala ndi “kukhuthala” kwambiri komanso mawonekedwe ochepa apamwamba.
Wosalala vs wokanikizidwa — choyenera kusankha
- Wosalala ndi wabwino ngati mukufuna kununkhira kwakukulu pompano (makamaka kwa tiyi wa mphukira ndi watsopano).
- Wokanikizidwa ndiwothandiza ngati mukukonzekera kusunga, kukalamba, kuphika, kapena kumwa tiyi pafupipafupi m’kuchuluka kwakukulu.
Momwe mungachotsere tiyi pa pancake
- gwiritsani ntchito mpeni wopyapyala / chowotcha cha tiyi ndikugwira ntchito m’magawo, osasandutsa tiyi kukhala fumbi;
- ngati kukanikizidwa kuli kolimba kwambiri, mutha “kupumitsa” pambuyo potsegula phukusi kwa masiku 1-2 m’malo osalowerera ndale owuma — tsamba limakhala losavuta;
- yesetsani kusunga zidutswa zazikulu: kotero kukoma kumakhala koyera komanso kofewa.
Chofunika: kukanikizidwa sikuti “kumapangitsa tiyi kukhala wabwino” mwachisawawa. Ngati zipangizo zoyamba kapena kusunga kuli koipa, pancake imangosunga vutolo.
15. Momwe Tiyi Amasinthira Pakupita kwa Nthawi:
Kukalamba kwa tiyi woyera sikuyenera kukhala “zaka zambiri”. Ngakhale m’mikhalidwe ya pakhomo, kusintha kumawonekera molawirira.

- mzere wa zipatso zouma umakula, mawonekedwe a udzu ndi zokometsera;
- magulu a masamba (Shòu Méi) amakhala “okomoka” kwambiri.
Zaka 7+
- mawonekedwe amakhala otentha komanso ozama: udzu wouma, nkhuni, mkate / mphesa zouma;
- tiyi nthawi zambiri amakhala woyenera kuphika.
Chikhalidwe chimodzi: kusunga kowuma ndi popanda fungo. Pakusunga kwa chinyezi, “zaka” zimasanduka vuto (nkhungu / acidity).
16. Momwe Mungasankhire Gulu Labwino:
Posankha tiyi woyera, ndi bwino kumvetsetsa pasadakhale, mtundu wanji womwe mukufuna: “kuwonekera kwa m’chisanu” (Xīn Chá) kapena kuzama kwa uchi ndi zipatso zouma (wakale). Kenako — fufuzani gululo ngati chinthu chochokera, osati ngati nthano yokongola.
1) Yang’anani deta yoyamba
- Chaka ndi nyengo: tiyi woyera ndi chakumwa cha nyengo. “M’chisanu” nthawi zambiri amakhala wosakhwima mmafungo, “chilimwe/m’dzinja” — wokhuthala komanso wa udzu.
- Dera ndi wopanga: kwa chikale cha Fujian, Fuding/Zhenghe ndi mudzi / dera linalake ndi lofunika. Kwa madera atsopano — dera linalake la kulima.
- Gulu la zipangizo: Yín Zhēn / Bái Mǔ Dān / Gōng Méi / Shòu Méi (kapena chofanana). Izi ndizowona kuposa “premium” yosadziwika.
2) Onani tsamba louma
- Kuthunthu: tizidutswa tochepa kwambiri ndi fumbi, gawo loyenera.

3) Kuyesa mwachangu mu kumwa
- Kuwonekera kwa kumwa: tiyi wabwino woyera nthawi zambiri amapereka kumwa koyera, kosakhala ndi matope.
- Pambuyo pakumwa: kuyenera kukhala kotsekemera ndi kwautali, popanda acidity yosasangalatsa ndi “dothi”.
4) Kwa tiyi woyera wakale (Lǎo Chá)
- funsani / yang’anani, momwe tiyi adasungidwira (kowuma, popanda fungo);
- pewani magulu okhala ndi nkhungu, acidity, fungo lakale — izi si “mawonekedwe a mankhwala” koma vuto la kusunga.
Mfundo yaikulu: ndi bwino kusankha tiyi wokhala ndi chiyambi chodziwika ndi kununkhira koyera, kuposa tiyi “wakale kwambiri” wokhala ndi mbiri yosamveka.
17. Madzi ndi Zida:
Ubwino wa madzi ndi zida umawonekera makamaka pa tiyi woyera: ndi wosakhwima, ndipo zokoma zilizonse “zowonjezera” zimawonekera nthawi yomweyo.
Madzi
- Ofewa kapena apakati pa mchere nthawi zambiri amagwira bwino kwambiri. Madzi olimba kwambiri amachepetsa kutsekemera ndi kukulitsa kumwa, pamene madzi osowa mchere amatha kupereka “kupanda kanthu”.
- Ngati palibe mwayi woyezera mchere, tsatirani mfundo yosavuta: madzi akumwa omwe amakoma okha, nthawi zambiri amayenera tiyi.
- Fungo la madzi (chlorine, “pulasitiki”, chitsulo) nthawi yomweyo limasamutsira ku kumwa. Fyuluta kapena kusiya pang’ono nthawi zambiri kumathetsa vutoli.
Zida
- Kwa tiyi woyera watsopano (Xīn Chá), porcelain kapena galasi ndi zabwino: sizitenga fungo ndipo “siziba” kununkhira.
- Kwa tiyi woyera wakale (Lǎo Chá), porcelain ndi ceramic yolimba ndiyoyenera. Kettle ya dongo n’kotheka, koma iyenera kukhala yosalowerera ndale ndi kutsukidwa bwino — tiyi woyera amatenga mosavuta fungo lachilendo.
- Galasi ndiwothandiza ngati mukufuna kuwona kutseguka kwa tsamba ndikuwongolera mtundu wa kumwa.
Zinthu zazing’ono zomwe zimasintha kukoma
- tenthetsani gaiwan / kettle kwa tiyi wakale woyera (kwa watsopano, kutentha kokwanira);
- musasiye tiyi “akuyandama” m’madzi pakati pa kuthira;
- ngati tiyi ndi wokanikizidwa — mupatseni nthawi kuti agwe ndipo musakankhire ndi mpeni kukhala fumbi: zidutswa zazing’ono zimathira movutikira.
18. Chikumbutso Chachangu pa Kuthira:
Pansipa pali kakonjedwe kakang’ono komwe kamathandiza kupeza “kukoma” mwachangu ngakhale popanda kuyesa kwautali. Gwiritsani ntchito ngati poyambira ndipo kenako sinthani malinga ndi gulu lenileni.
1) Kutentha
- Tiyi wa mphukira komanso wosalimba kwambiri (mtundu wa Yín Zhēn): 70–80 °C.
- Mphukira + masamba (mtundu wa Bái Mǔ Dān): 80–90 °C.
- Masamba ndi okanikizidwa (Gōng Méi / Shòu Méi, ma pancake): 90–100 °C.
2) Muyeso
- pa kuthira: 5 g pa 150–200 ml — ndi chitsogozo chokhazikika;
- ngati kukoma kuli kopanda kanthu — onjezerani 1–2 g; ngati kuli kokhuthala kwambiri — chepetsani.
3) Nthawi
- yambani ndi masekondi 10-20, kenako onjezerani;
- ngati zowawa zikuwonekera — fupikitsani kuthira koyamba ndi/kapena chepetsani kutentha.
4) Pomwe kuphika ndi koyenera
- nthawi zambiri — kwa tiyi wakale komanso wa masamba;
- ngati tiyi ndi wokanikizidwa, kuphika kumapereka mawonekedwe a “compote” okhazikika ndi kutsekemera kwakukulu.
5) Cholakwika chofala kwambiri Tiyi woyera mwina amatenthedwa kwambiri (ndipo amapeza kukhwima), kapena amatenthedwa mochepa kwa wakale / wokanikizidwa (ndipo amapeza kupanda kanthu).
19. Kulawa ndi Kuyesa:
Ngati mukufuna kufanizira magulu ndikumvetsetsa dera / zaka, ndi bwino nthawi zina kuthira tiyi woyera “monga pa kulawa”.
Ndondomeko yaying’ono (cupping ya pakhomo)
- Tengani magulu awiri ndikuwathira m’zida zofanana (magaiwan awiri ofanana kapena makapu).
- Gwiritsani madzi ofanana, muyeso, ndi kutentha.
- Pangani kuthira katatu: kwaufupi (10–15 s), kwapakati (20–30 s) ndi kwautali (45–60 s).

- Kuyera: mawonekedwe aliwonse a fungo, acidity, “fumbi” nthawi zambiri amasonyeza mavuto a kusunga kapena zipangizo.
