Chapadera 2: “Kuwotcha kosiyana malinga ndi kukhwima” (老嫩分炒):

- Shengguo (生锅, “mbiya ya zosapsya”): Kuwotcha koyamba mu mbiya yotentha (~100°C+). Kulepheretsa ma enzyme kugwira ntchito, kuyamba kupanga mawonekedwe.

Chapadera 3: “Moto wa Choonadi Chachitatu” (三昧真火): Magawo atatu otsatizana a kuumitsa pamoto:
- La Maohuo (拉毛火, “kukoka moto waukali”): Kuumitsa koyamba pamadengu a nsungwi pamwamba pa makala (~100°C), kutembenuza pakatha mphindi 2-3. Mpaka ~80% youma. Tsamba limatenga mawonekedwe a “mbewu”, mtundu umakhala wobiriwira kwambiri.
- La Xiaohuo (拉小火, “kukoka moto wawung’ono”): Kuumitsa kwachiwiri (~120°C). Mpaka ~90% youma. Kupanga fungo labwino. Kenako — “kupuma” kwa masiku 3-5 (吐绿/回疲, “kutulutsa zobiriwira”) kuti chinyezi chotsalira chigawidwe mofanana.
- La Laohuo (拉老火, “kukoka moto wakale”): Ntchito yomaliza ndi yochititsa chidwi kwambiri. Kutentha — 160–180°C. 6. Makhalidwe a Kumva:

- Fungo la tsamba lowuma: Lalitali, losatha, lokhala ndi zizindikiro za mtedza wokazinga (板栗香, bǎnlì xiāng) — fungo lodziwika bwino la Gua Pian, lopangidwa ndi “moto wachitatu”. Zowonjezera zina — maluwa pang’ono (orchid), “zobiriwira” (udzu wongodulidwa kumene), nthawi zina — utsi wawung’ono.
- Fungo la madzi: “Latsopano ndi lalitali” (清香高爽, qīngxiāng gāoshuǎng). Mtedza ndi maziko, maluwa ndi zokometsera za udzu. Fungo ndi lolimba — limakhalapo pakumwa kwa nthawi 3–5.
- Kukoma: “Kosadzaza koma kosawawa; onunkhira koma osakomera” (味浓而不苦,香而不涩). Kolemetsa, “kwathunthu” (醇厚, chúnhòu). Kutsekemera kwachilengedwe, ndi kuya kwa mtedza. Kuwawa — kochepa kwambiri (chifukwa chosowa maphukusi ndi tinthu tating’ono). Pang’ono kumva mchere kuchokera ku nthaka za m’mapiri za Qi Shan. Kukoma komwe kumatsalira pambuyo — kwautali, kotsekemera, ndi “kutsekemera kobwerera” (回甘, huígān). Huigan imaonekera bwino, ikukula.
- Mtundu wa madzi: Oonekera, obiriwira owala ndi kamtundu kachikasu (清澈明亮). Mtundu “wamoyo” — ngati mtsinje wamapiri.
- Pansi pa tiyi (tsamba lophikidwa): Mapepala athunthu, osalala, osasunthika a masamba — opanda maphukusi, opanda tinthu tating’ono, opanda zidutswa. Mtundu wofanana wachikasu-wobiriwira. 7. Zomwe Zili M’thupi la Tiyi:
- Polyphenols (茶多酚): Mlingo wokwera wa ma catechin, makamaka EGCG. Masamba okhwima (osati maphukusi.) ali ndi polyphenols ochuluka kuposa maphukusi ang’ono — zomwe zimapangitsa Gua Pian kukhala m’modzi mwa tiyi obiriwira omwe ali ndi mphamvu zambiri zolimbana ndi okosijeni.

- Mavitamini: C (wokwera — tiyi wobiriwira), B₁, B₂, E, K.
- Mchere: Mbiri yolemera — nthaka za granite ndi slate za Qi Shan. Potaziyamu, manganese, zinc, maniyamu, phosphorous.
- Zopanga Fungo: Gulu la ma pyrazine ndi ma furan, omwe amapangidwa pa nthawi ya “moto wachitatu” — amachititsa fungo la mtedza. Linalool, geraniol — zonunkhira za maluwa.
8. Ubwino wa Thupi:
- Mphamvu yayikulu yolimbana ndi okosijeni: Masamba okhwima (osati maphukusi) ali ndi polyphenols ochuluka — Gua Pian ndi m’modzi mwa “opambana” pa EGCG pakati pa tiyi obiriwira.
- Kuchotsera kutopa mofewa: Caffeine + L-theanine. Mlingo wa caffeine ndi wotsika kuposa tiyi wamaphukusi — kumakhala kofewa, koyenera kumwa pambuyo pa chakudya.
- Kuthandiza kagayidwe kachakudya: Ma catechin amathandizira kutenthetsa thupi ndi kuyaka mafuta.
- Kuthandiza mtima ndi mitsempha: Polyphenols amathandizira kusinthasintha kwa mitsempha, amawongolera cholesterol.
- Kusonkhezera kutaya thupi mofewa: Kusowa kwa maphukusi ndi tinthu tating’ono kumachepetsa kukwiya kwa m’mimba.
- Kupereka mchere ku thupi: Mbiri yamchere yolemera chifukwa cha nthaka zamapiri.
9. Kusakaniza:
- Kutentha kwa madzi: 80–85°C. Masamba osalala okhwima sakhudzidwa kwambiri ndi kutentha kwakukulu poyerekeza ndi tiyi wamaphukusi, koma madzi otentha kwambiri sagwiritsidwa ntchito — amatha “kuphika” kukoma kwake.
- Mlingo wa tiyi: 3–5 g pa 150–200 ml.
- Chotengera: Kapu yamagalasi (玻璃杯) — ndi njira yachikale: imalola kuyang’ana momwe “mbewu” zosalala zimamira pang’onopang’ono pansi, zikutseguka. Chotengera cha porcelain cha gaiwan — cha kupanga kusakaniza kolamulidwa. Kapu yaying’ono.
- Njira (njira ya “kuthira pawiri”, 二道冲泡法):
- Tenthetsani kapu/gaiwan ndi madzi otentha.
- Ikani 3–5 g wa tiyi.
- Thirani pafupifupi 1/3 ya madzi (80°C), siyani kwa masekondi 30 — “kudzutsa” tsamba.
- Thirani mpaka kudzaza.
- Siyani kwa mphindi 2–3. Yang’anani “kuvina kwa mbewu”.
- Mukakhala kuti mwatha kumwa ~2/3, thirani madzi otentha (mwina 85°C).
- Kuthira kowonjezera 3–5. Gua Pian amalimba pakuthiridwa mobwerezabwereza — masamba okhwima amatulutsa mankhwala ake pang’onopang’ono kuposa amaphukusi.
- Njira ina — kuthira mwachikhalidwe (功夫泡法): 4–5 g mu gaiwan 100–120 ml, 70–80°C, kuthira koyamba — masekondi 60, kenako — masekondi 45–60, kuthira 4–6.
10. Kusunga:
- Chotengera: Chotsekedwa bwino, chosawonekera — chitini, thumba lochokera ku zojambulazo lokhala ndi zip-lock.
- Mikhalidwe: Firiji (0–5°C) — ndikulimbikitsidwa kwambiri kwa tiyi wobiriwira. Chotengera chotsekedwa bwino nchofunikira (tiyi wobiriwira amalanda fungo lina mwachangu). Kunyumba (kutentha kwapakati) — mugwiritse ntchito mkati mwa miyezi 2–3.
- Nthawi yake: Miyezi 6–12 m’firiji. Gua Pian watsopano (miyezi 3 yoyamba) — ndiye fungo labwino kwambiri la mtedza ndi kutsitsimuka. “Chisanu choyera” (白霜) pamasamba ndi chizindikiro cha kutsitsimuka; chikasoŵa — tiyi wakalamba.

11. Mtengo ndi Zonyenga:
