4. Terroir ndi Makhalidwe a Kulima:

  • Kutalika kwa kumera: 800–2000 m. Magawo akuluakulu ali pa utali wa 800–1500 m, koma mitengo ina ya m’chilengedwe imapezeka pamwamba pake — mpaka 2000 m m’mapiri a Cenwang Laoshan.

5. Ukadaulo Wopanga:

Língyún Hóngchá amapangidwa ndi ukadaulo wa tii wofiira wa gongfu, wosinthidwa kuti ugwirizane ndi masamba akulu a laimu yochuluka.

  • Kutola (采摘, cǎizhāi): Kutolera ndi manja timphukira tatsopano; pamagulu apamwamba — zipangizo za kasupe zokha.

  • Kukwinya (揉捻, róuniǎn): Masamba ofewa amakwinidwa kuti aphwanye makhoma a maselo ndi kumasula ma enzymes. Chifukwa cha kukula kwa tsamba, kukweza kwapang’onopang’ono, kwapakati kumagwiritsidwa ntchito kuti lisaduke tsamba lonse, koma lipange mawonekedwe ake opindika.
  • Kuwiritsa/Oxidation (发酵, fājiào): Masamba okwinidwa amaikidwa mosanjikiza m’chipinda chokhala ndi kutentha kolamuliridwa (25–28°C) ndi chinyonthi (≥95%). Nthawi ndi maola 2–4.   • Kukoma: Kwambiri, kokwanira, ndi kukoma kozungulira kozungulira komanso kuwawa pang’ono. Thupi — lolemera, ngati “velveti” (浓醇, nóng chún). 9. Kusakaniza:

  • Kutentha kwa Madzi: 90–95°C.
  • Kuchuluka kwa Tii: 4–5 g pa 100–120 ml (njira ya gongfu); 3–4 g pa 200–250 ml (njira yaku Ulaya).
  • Ziwiya: Gaiwan (盖碗) yopangidwa ndi porcelani yoyera — njira yabwino yowonetsera fungo. Chikho cha Yixing — chimapereka kufewa. Chikho chagalasi — chokongola kuwona mtundu wa madzi otentha ndi kutseguka kwa masamba akulu.
  • Ndondomeko (njira ya gongfu):
    1. Tenthetsa gaiwan ndi madzi otentha, tsani.
    2. Ikani tii, phimbani ndi chivindikiro kwa masekondi 10, mpumitsani fungo.
    3. Kutsuka — kuthira mwachangu (2–3 masekondi), tsani. Amayamikiridwa pa tii wamasamba akulu wopindika molimba.
    4. Kuthira koyamba: masekondi 8–10.
    5. Kuthira kwachiwiri–kwachinayi: masekondi 10–15.
    6. Kuyambira kuthira kwachisanu — onjezerani masekondi 5–10.
    7. Língyún Hóngchá nthawi zambiri amapirira kuthira 7–10.

10. Kusunga:

  • Chidebe chotseka, chosawonekera (chitsulo, thumba la zojambulazo).
  • Kutentha 15–25°C; malo owuma, osawala; chinyonthi chochepera 60%.
  • Nthawi yabwino yomwera ndi miyezi 12–24. Magulu abwino ochokera ku zipangizo za kasupe amatha kukula mofewa kwa zaka 2–3.
  • Osasunga m’firiji; pewani kukhala pafupi ndi zakudya zafungo lamphamvu.

11. Mtengo ndi Zopeka:

  • Gawo la Mtengo: Gawo lapakati ndi lopamwamba: magulu oyenerera — 150–400 yuan/500 g; lapamwamba “Jingou Hong Tiao” — 500–1500+ yuan/500 g. Mtengo umadalira mulingo wa kutola, kuchuluka kwa timphukira, nyengo ndi chiphaso (kulima kwachilengedwe — ndi kukwera mtengo).
  • Momwe Mungapewere Zopeka:
    1. Yang’anani chilembo «凌云白毫» ndi chisonyezero cha malo (地理标志证明商标, cholembedwa mu 2016) kapena chizindikiro «凌云白毫茶» (地理标志产品保护, kuyambira 2005).
