Gōngfū chá · 工夫茶

- Kuphika mobwerezabwereza (infusions): Gong Fu Cha imatanthauza kuphika mobwerezabwereza gawo limodzi la tii. - Cha Pan (茶盘) – thireyi ya tii / bolodi la tii: lotolera madzi otayira ndi kupanga malo a maonekedwe abwino.
- Kuunika kwa kumva pa sitepe iliyonse: Gong Fu Cha ndi ndondomeko ya kuunika kwa kumva kosalekeza. Pa sitepe iliyonse – kuyambira kuunika tsamba louma, kuwona mtundu wa madzi, kununkhiza fungo, kulawa kakomedwe ndi kuunika kakomedwe kotsalira – mphamvu zonse za kumva zimayambika. Kumwa tii kumakhala ndondomeko yozindikira, yosinkhasinkha, yolunjika ku kulowa kwathunthu m’dziko la tii.
4. Ziwiya ndi Zida Zofunika za Gong Fu Cha:

Gaiwan (盖碗) kapena Chikho cha dongo la Yixing (紫砂壶):
- Gaiwan (盖碗) – “chikho cha chivindikiro”: Chida chogwiritsidwa ntchito mofala ndi chotchuka cha Gong Fu Cha. Gaiwan amapangidwa ndi porcelain, galasi kapena ceramic, ndipo amakhala ndi chikho, chivindikiro ndi mbale. Ndi yabwino pophikira tii, imathandiza kuyang’anira ndondomekoyi mosavuta, kuwona kutseguka kwa tsamba ndi kuunika fungo. Imayenera makamaka ma oolong opepuka, tii zobiriwira ndi zoyera.
- Chikho cha dongo la Yixing (紫砂壶): Chida chachikhalidwe cha China chopangidwa ndi dongo lapadera lopangira dzenje kuchokera ku dera la Yixing. Zikho za Yixing “zimapuma”, zimathandiza kukometsa kakomedwe ka tii popita nthawi, ndi “kukumbukira” fungo la tii yophikidwa mmenemo. Zimayamikiridwa makamaka kwa ma oolong akuda, pu’er ndi tii zofiira. Zimafuna “kumangirizidwa” ku mtundu wina wa tii.

Cha Hai (茶海) / Gong Dao Bei (公道杯) – “Chikho cha Chilungamo” / “Chikho cha Kufanana”: Kapu yaing’ono yosungira madzi kuchokera mu gaiwan kapena chikho. Idapangidwira kuletsa ndondomeko ya kuphika (kuti tii isaphikidwe mopambanitsa) ndi kufanizira kuchuluka kwa madzi asanatayire m’makapu, kuti alendo aliyense alandire tii ya mphamvu yofanana. Nthawi zambiri amapangidwa ndi galasi, porcelain kapena ceramic.

Makapu a Tii (品茗杯 – Pin Ming Bei): Makapu aang’ono omwera tii, nthawi zambiri a porcelain kapena ceramic. Nthawi zambiri amagwiritsa makapu awiriawiri: Wen Xiang Bei (闻香杯) – “kapu ya fungo” (yaitali, yopapatiza) ndi Pin Cha Bei (品茶杯) – “kapu ya kulawa” (yotsika, yotakata). Wen Xiang Bei idapangidwira kuunika fungo la tii pambuyo potaya tii kuchokera mmenemo kupita ku Pin Cha Bei.

Cha Ju (茶具) – Mndandanda wa Zida za Tii (Cha Dao – 茶道 – “Njira ya Tii”): Mndandanda wa zida zothandiza zomwe zimapangitsa kumwa tii kukhala kosavuta ndi kokongola. Nthawi zambiri zimaphatikizapo:

- Cha Jia (茶夹) – Chobaya cha Tii: chogwirira ziwiya zotentha, makapu, kuchotsa masamba mwakongola mu gaiwan / chikho.
- Cha Tong (茶筒) – Chidebe cha Tii / Chotengera Tii: chosungira tii.
- Cha Lü Mo Wo (茶滤网) – Sefa ya Tii (posankha): ingagwiritsidwe ntchito kusefera tii poyithira kuchokera mu gaiwan / chikho kupita ku chahai, makamaka kwa tii za masamba aang’ono.
- Cha Xian (茶线) – Chingwe cha Tii (posankha): chingwe chochepa chochotsera masamba amene mwangozi agwera pamwamba pa madzi.
- Choyikapo gaiwan / chikho (posankha).

Cha Pan (茶盘) – Thireyi ya Tii / Bolodi la Tii (茶船 – Cha Chuan – “Boti la Tii”): Thireyi kapena bolodi lokhala ndi thanki yotolera madzi otayira. Ili ndi ntchito yothandiza (imalepheretsa madzi kutayika patebulo) komanso yokongola (imapanga malo a tii audongo ndi ogulitsidwa). Ikhoza kukhala ya maonekedwe ndi makulidwe osiyanasiyana, yamatabwa, nsungwi, ceramic, mwala, ndi zina.

Bolodi la fungo (闻香盘 – Wen Xiang Pan) – posankha: Bolodi laling’ono lamatabwa kapena nsungwi lowonetsera ndi kuunika fungo la tsamba louma.

Nsalu ya tii / chopukutira (茶巾 – Cha Jin): Chopukutira ziwiya, kutolera madzi otayira.

Madzi abwino: Ubwino wa madzi ndi wofunika kwambiri pa kakomedwe ka tii. Akulimbikitsidwa kugwiritsa madzi ofewa, osefedwa kapena madzi a m’mabotolo okhala ndi mchere wochepa.

Chikho chotenthera madzi chowongolera kutentha: Kwa Gong Fu Cha, kuwongolera kutentha kwa madzi nkofunika kwambiri. Chikho chamagetsi chokhala ndi chowongolera kutentha chimalola kukhazikitsa kutentha koyenera kwa mitundu yosiyanasiyana ya tii.

Sikelo (yolondola, yamagetsi – posankha): Kuyeza molondola kuchuluka kwa tii, makamaka pamaphunziro oyambirira. Popita nthawi, okonda Gong Fu Cha odziŵa bwino nthawi zambiri amazindikira kuchuluka “ndi maso”.
5. Ndondomeko ya Kuphika Tii ya Gong Fu Cha (sitepe ndi sitepe):
Ngakhale sitepe zenizeni ndi tsatanetsatane zingasiyane malinga ndi mtundu wa tii, zokonda zaumwini ndi miyambo ya m’zigawo, iyi ndi ndondomeko ya sitepe ndi sitepe yopangira tii m’njira ya Gong Fu Cha:

Kukonzekera madzi ndi ziwiya:
- Tenthetsani madzi ku kutentha koyenera kwa mtundu wa tii wosankhidwa (mwachitsanzo, kwa tii zobiriwira ndi zoyera – 70-85°C, kwa ma oolong opepuka – 85-95°C, kwa ma oolong akuda ndi tii zofiira/zakuda – 95-100°C, kwa pu’er – 95-100°C).
- Tenthetsani ziwiya zonse: Tsukani gaiwan / chikho, chahai, makapu ndi madzi otentha. Izi si zongotenthetsa ziwiya, komanso zimathandiza “kudzutsa” fungo la ziwiya ndi tii. Madzi otenthetserawa atayireni pa thireyi ya tii kapena m’chidebe.

Kuunika tsamba louma (賞茶 – Shang Cha):
- Perekani kwa alendo kuunika tsamba louma: Ikani tii pa bolodi lapadera la fungo kapena m’chidebe cha tii, ndipo perekani kwa alendo kuti ayamikire maonekedwe a tsamba louma, kuunika mawonekedwe ake, mtundu, kukhulupirika ndi kupumira fungo lake. Iyi ndi sitepe yoyamba ya zokumana nazo za kumva za Gong Fu Cha.

Kuthira tii mu gaiwan / chikho (投茶 – Tou Cha):
- Gwiritsani ntchito kapu / chokumbira (Cha Chi), kuti musamutse bwino kuchuluka koyenera kwa tii mu gaiwan kapena chikho chotenthetsedwa.
- Kuchuluka kwa tii: Nthawi zambiri amagwiritsa tii yambiri yandendende pa madzi ochepa. Kuchuluka kwenikweni kumadalira mtundu wa tii, kukula kwa chida ndi zokonda zaumwini. Yambani ndi 1/3 – 1/2 ya kuchuluka kwa gaiwan / chikho kwa ma oolong ndi pu’er, ndi kuchepera kwa tii zopepuka. Popita nthawi, mudzatha kusankha chiŵerengero choyenera.

Kupumira fungo la tsamba lotenthetsedwa (温润泡 – Wen Run Pao / 闻香 – Wen Xiang) – POSANKHA, koma akulimbikitsidwa:
- Tsekani gaiwan / chikho ndi chivindikiro ndipo gwedezani pang’ono. Izi zimathandiza kutenthetsa masamba a tii ndi kutulutsa fungo lake.
- Tsegulani chivindikiro ndipo pumirani fungo la tsamba lotenthetsedwa. Lingasiyane ndi fungo la tsamba louma ndipo lingapereke chithunzithunzi cha momwe madzi adzakhalire. Sitepe iyi ndi yofunika makamaka kwa ma oolong.

“Kudzutsa” tii / “Kutsuka” (洗茶 – Xi Cha) – POSANKHA kwa mitundu yambiri ya tii, koma akulimbikitsidwa kwa ma oolong, pu’er ndi tii zina zofiira:
- Thirani tii ndi madzi otentha. Kuchuluka kwa madzi kuyenera kukhala kokwanira kuphimba masamba, koma osadzaza gaiwan / chikho mokwanira (kuphika koyamba nthawi zambiri kumakhala kaufupi kwambiri).
- Nthawi ya “kutsuka” ndi yaufupi kwambiri, masekondi ochepa basi (3-10 masekondi, nthawi zina mwachangu kwambiri). Cholinga si kuphika tii, koma kutsuka fumbi lomwe lingakhalepo ndi “kudzutsa” tsamba la tii, kulikonzekeretsa ku kuphika kotsatira ndi kuthandiza fungo kuwululika.
- Nthawi yomweyo tsani kuphika koyamba “kotsuka”, nthawi zambiri kumatayira ku thireyi ya tii kapena m’chidebe (osamwa). Kwa mitundu ina ya tii (mwachitsanzo, sheng pu’er wokalamba) “kutsuka” koyamba kungakhale kwautali ndipo madzi angakhale oyenera kumwa.

Kuphika koyamba (第一泡 – Di Yi Pao) ndi kuphika kotsatira (后续泡 – Hou Xu Pao):

Thirirani tii ndi madzi otentha kachiwiri, nthawi ino pa nthawi ya kuphika koyamba. Nthawi ya kuphika koyamba nthawi zambiri ndi yaufupi kwambiri (10-20 masekondi kwa ma oolong ambiri, ingakhale yaitali kwa pu’er ndi tii zofiira, ndi yaifupi kwa tii zobiriwira ndi zoyera).

Kwa kuphika kotsatira, onjezerani pang’onopang’ono nthawi yophikira, ndi 5-10 masekondi kapena kupitirira ndi kuphika kulikonse kwatsopano. Yang’anani mtundu wa madzi ndi kakomedwe – uyenera kukhala wolemera, koma osawawa kapena kunyanya mopambanitsa.

Tsani madzi onse mu gaiwan / chikho kupita ku chahai ku dontho lomaliza. Izi nzofunika kuti aletse ndondomeko ya kuphika ndi kupewa kuphika mopambanitsa kwa masamba mu gaiwan / chikho. Ngati mwasiya madzi mu gaiwan, masamba adzapitiriza kuphika, ndipo kuphika kotsatira kudzakhala kowawa kwambiri ndi kosawongoleredwa.

Kuthira tii kuchokera mu chahai kupita m’makapu (分茶 – Fen Cha):
- Tsanulirani mosamala madzi kuchokera mu chahai kupita m’makapu a tii (Pin Cha Bei). Chahai imatsimikizira kugawidwa kofanana kwa mphamvu ya madzi pakati pa makapu.
- Ngati mukugwiritsa ntchito makapu awiriawiri (Wen Xiang Bei ndi Pin Cha Bei): choyamba thirani tii mu Wen Xiang Bei (kapu yaitali ya fungo), kenako mwachangu itembenuzireni ndi kuyiyika pa Pin Cha Bei (kapu yotsika ya kakomedwe), ndipo kwezani Wen Xiang Bei. Fungo, lolunjika mu Wen Xiang Bei, lingaunikidwe musanamwe tii kuchokera ku Pin Cha Bei.

Kuunika kwa kumva kwa kuphika kulikonse (品茗 – Pin Ming):

Unikani mtundu wa madzi (茶汤 – Cha Tang).

Pumirani fungo kuchokera m’kapu (闻香 – Wen Xiang). Bweretsani kapu kumphuno ndipo pumani mwachidule, mosazama, kuti mutenge kamwazikamwazi ka fungo.

Mwetani pang’ono ndipo lolani tii “kuyendayenda” pa lilime (品味 – Pin Wei). Unikani kakomedwe, kapangidwe, kuyanjana kwa kutsekemera, kuwawa, kunyanya, acidity, “thupi” la tii, kumva m’kamwa.

Unikani kakomedwe kotsalira (回甘 – Hui Gan). Pambuyo pomeza tii, onani za kumva komwe kumatsala m’kamwa ndi pakhosi – kutsekemera, kuzizira, kuzirala, kutentha, fungo.

Bwerezani kuunika kwa kumva kwa kuphika kulikonse, kuyang’ana kusintha kwa fungo, kakomedwe ndi mtundu wa madzi. Izi zimalola kutsatira kusintha kwa tii ndi kusangalala ndi mitundu yake yosiyanasiyana.

Bwerezani kuphika (magawo 6-8) kangapo, mpaka tii itathe mphamvu zake. Chizindikiro chakuti tii “yapereka zonse” ndicho kufowoka kwakukulu kwa fungo ndi kakomedwe, komanso mtundu wotumbululuka wa madzi.

Kukonza ndi kusamalira ziwiya: Pambuyo pomwa tii, tsukani ziwiya ndi madzi otentha ndipo ziloleni ziume mwachilengedwe. Ziwiya za dongo la Yixing sizilimbikitsidwa kutsukidwa ndi zotsukira, nkokwanira kungozitsuka ndi madzi otentha.
6. Mitundu ya Tii Yoyenera Gong Fu Cha:
Ngakhale Gong Fu Cha imagwirizana ndi ma oolong mwambiri, njira iyi ndi yoyenera kuphika mitundu yambiri ya tii, makamaka ngati mukufuna kufalitsa fungo ndi kakomedwe kake. Mitundu yoyenera kwambiri kwa Gong Fu Cha:
- Tii za Oolong (乌龙茶 – Wu Long Cha): Makamaka ma oolong a pakati ndi amphamvu, ma oolong a Wuyishan (岩茶 – Yan Cha), ma oolong a Taiwan, Tie Guan Yin (铁观音 – Tie Guan Yin), Da Hong Pao (大红袍 – Da Hong Pao), Shui Xian (水仙 – Shui Xian), Rou Gui (肉桂 – Rou Gui) ndi ena. Ma oolong ndi “mafumu” a Gong Fu Cha, ali oyenera bwino kwa njira iyi, kuwulula fungo lovuta ndikupirira kuphika kambiri.
- Pu’er (普洱茶 – Pu Er Cha): Makamaka Sheng Pu’er (生普洱 – Sheng Pu Er) – pu’er “wosaphika”, amenenso amaphikidwa bwino ndi njira ya Gong Fu Cha, kuwulula kakomedwe kosanjikizana ndi fungo ndikupirira kuphika kambiri. Shu Pu’er (熟普洱 – Shu Pu Er) – pu’er “wokhwima” naynso angaphikidwe Gong Fu Cha, koma nthawi zambiri amapirira kuphika kochepa.
- Tii zofiira/zakuda (红茶 – Hong Cha): Ena tii zofiira zapamwamba, makamaka zamasamba onse, monga Dian Hong (滇红 – Dian Hong), Qimen (祁门红茶 – Qi Men Hong Cha), Zheng Shan Xiao Zhong (正山小种 – Zheng Shan Xiao Zhong), angaphikidwenso ndi njira ya Gong Fu Cha, kuwulula kamwazikamwazi kakomedwe ndi fungo, kuposa momwe amaphikira “ku Ulaya”.
