4. Malo Okhala ndi Makhalidwe a Kulima:
- Malo: Mbali zakumpoto za phiri la Li Shan. Minda yotsetsereka, nthawi zambiri yokhala ndi mizere yopangidwa pansi pa miyala.
- Kutalika: 1800–2200 m – kuposa tiyi wochuluka wa ku Alishan (1000–1600 m), ndipo wofanana ndi Fushoushan (~2600 m) ndi Huagang (~2300 m).
- Dothi: Lamapiri, lokhala ndi michere yambiri komanso zomera zowola. Madzi amayenda bwino mwachilengedwe pamalo otsetsereka.
- Nyengo: Yozizira yamapiri. Kutentha kwapakati pa chaka 14–16°C. Kusintha kwatsiku ndi tsiku 10–15°C. Chinyezi 80–90%. Nkhungu – pafupifupi tsiku lililonse, makamaka m’mawa ndi madzulo. M’nyengo yozizira – chipale chofewa chimatha kugwa.

- Kufowoketsa (萎凋, wěidiāo): Pamthunzi kapena m’nyumba. Maola 2–6. Kuchepetsa kuchuluka kwa madzi pang’onopang’ono.
- Kugwedeza (搖青, yáo qīng): Mosamala kwambiri – mozungulira 3–4 ndi nthawi yayitali yopuma. Kuonongeka kochepa m’mphepete.
- Kufufumitsa (發酵, fājiào): Kochepa, 10–25%. Kusunga kutsitsimuka kwakukulu.
- Kukonza (殺青, shā qīng): Kuwotcha kutentha kwambiri.
- Kuphwanya (揉捻, róuniǎn): Kuphwanya ndi nsalu (布揉, bù róu) – mapangidwe ozama ngati theka la mpira.
- Kuumitsa (烘乾, hōnggān): Kutentha kochepa. Popanda kuwotcha – kusunga kutsitsimuka.
- Kusanja (分級, fēnjí): Kusankhidwa mosamalitsa.
6. Makhalidwe a Organoleptic:
- Maonekedwe a masamba owuma: Mapangidwe ozama ngati theka la mpira, kuchokera wobiriwira wa emerodi kufika wobiriwira wakuda, wonyezimira. Wokulirapo kuposa pafupifupi – masamba apamapiri amakhala athupi. Masamba a nsonga ndi ubweya woyera.
- Fungo la masamba owuma: Latsopano modabwitsa, “lozizira” – ngati mphepo yamapiri m’mawa. Orchid, gardenia, lily ya m’chigwa. Manunkhira a zonona, zipatso (peyala, pichesi, lychee) ndi udzu. Phunziro lapadera la “pine” – fungo lofatsa la paini ya m’mapiri, lomwe limasiyanitsa Cuì Luán Wūlóng ndi tiyi wina waku Li Shan.
- Fungo la madzi a tiyi: Lolemera, lamaluwa, lokoma. Zonona, zipatso, uchi. Lolimba komanso “lamoyo” – fungo limakhalabe pachivundikiro cha gaiwan kwa mphindi zambiri.
- Kukoma: “Crystal” – ndilo liwu lalikulu la Cuì Luán Wūlóng. Lofewa komanso “lowala” kuposa Li Shan wamba. Kuwawa kochepa, kutsekemera kwachilengedwe kowonekera. Manunkhira amaluwa (orchid, gardenia), a zonona, a zipatso (peyala, vwende, lychee). Kuwawidwa pang’ono. Pambuyo pake – kutsekemera kwakutali, kotsitsimula, ndikubwerera (回甘, huígān). Kakhadwe – kosalala, “ngati mpweya”.
- Mtundu wa madzi a tiyi: Wotuwira pang’ono, wobiriwira wa golide ndi kuwala kosaoneka bwino ngati nkhope. Wosalala, woyeretsedwa.
- Masamba otsala: Masamba athunthu, akulu, olimba obiriwira ngati emerodi. Athupi – chizindikiro cha zopangira zapamapiri.
7. Zomwe Zili mu Chemical:
- Ma polyphenols (catechin): Mulingo wochepa kusiyana ndi ma ulongi a pamunsi – kuzizira ndi mawonekedwe akumpoto zimalepheretsa kapangidwe. Kuwawa kochepa.
- Ma amino acid: Kuchuluka kwakukulu kwa L-theanine – ndi imodzi mwa ma amino acid ochuluka kwambiri mu ma ulongi aku Taiwan. Ndiwo maziko a kutsekemera, umami ndi zotsatira zopumula.
- Ma alkaloid: Kafeini yochepa (~20–25 mg/g). Yocheperapo pang’ono kuposa pafupifupi.
- Mafuta ofunikira: Linalool, nerol, geraniol (manunkhira amaluwa); α-pinene (fungo la paini la “m’mapiri” – lomwe limadziwika ndi malo akumpoto). Kuchuluka kwa mafuta ofunikira.

8. Zopindulitsa:
- Zotsatira zopumula (chofunika kwambiri): Kuchuluka kwakukulu kwa L-theanine – kupumula momveka popanda kugona.
- Kulimbitsa pang’ono: Kafeini + L-theanine.
- Chitetezo cha antioxidant: Ma catechin + vitamini C wokwera.
- Zotsatira zotsitsimula: Khalidwe “lozizira”.
- Kupweteka kochepa m’matumbo: Mulingo wochepa kwambiri wa ma tannin.
- Kusintha kwa malingaliro: L-theanine + fungo lolemera.
9. Kuphika:
- Kutentha: 80–88°C. Madzi otentha kwambiri sayenera ayi – adzawononga manunkhira ofewa. Kwa Cuì Luán Wūlóng wapamwamba wa masika – 80–83°C.
- Kuchuluka kwa tiyi: 5–7 g pa 150 ml.
- Zida: Gaiwan wa porcelain – ndi wabwino. Makoma owonda “samaba” kutentha ndipo amalola kuyamikira fungo lafatsa. Teapot yamagalasi - kuti muwone momwe masamba akutsegukira.
- Ndondomeko:
- Tenthetsani zida.
- Kuthira kotsuka: thirani ndikutsanulira nthawi yomweyo (akatswiri ena amalephera – phulusa loyamba la Cuì Luán Wūlóng ndilamtengo wapatali kwambiri).
- Kuthira koyamba: masekondi 45–60.
- Kuthira 5–7+, masekondi 15–20 owonjezera pa chilichonse.
- Kuphika kozizira: 5 g pa 500 ml, maola 8–10 mufiriji. Zotsatira zabwino kwambiri – kuyera kwa “crystal” kumawululidwa kwathunthu.
10. Kusunga:
- Chidebe chotsekedwa bwino, mufiriji (chipinda chosiyana ndi zakudya), kutali ndi fungo. Monga ulongi wosafufumitsidwa kwambiri wopanda kuwotcha – Cuì Luán Wūlóng samva bwino kutentha ndi kuwala.
- Nthawi yabwino ndi miyezi 6–12. Osati kuti isungidwe kwa nthawi yayitali.
- Paketi ya vacuum – ndi yabwino.
11. Mtengo ndi Zabodza:
Cuì Luán Wūlóng ndi umodzi mwa ma ulongi a ku Taiwan okwera mtengo kwambiri. Wokwera mtengo kuposa Alishan ndi Li Shan wamba; wofanana ndi Fushoushan ndi Huagang.

- Kukoma – “crystal”, pafupifupi popanda kuwawa. Kuwawa = si Cuì Luán Wūlóng.
- Mtengo: Cuì Luán Wūlóng weniweni sangakhale wamtengo wokhala ngati Alishan wamba.
12. Zochititsa Chidwi:
- Cuì Luán Wūlóng ndi imodzi mwa “ngale zitatu za Li Shan”: Fushoushan (2600 m), Huagang (2300 m), Cuì Luán Wūlóng (2200 m). Onse atatu ndi apamwamba kwambiri a ku Taiwan okwera pamapiri.

- Minda ina ya Cuì Luán Wūlóng ili pamalo okwera kuposa Alishan yotchuka (1000–1600 m) – kusiyana kwa 400–600 m kumamveka mu kukoma.
