- Mtundu wa phukusi: Wotumbululuka ngati udzu mpaka wa mafuta wa ng’ombe, wokhala ndi kuwala kwa siliva. Wowala.
- Malo a tiyi: Masamba athunthu olimba, achikasu chowala mpaka obiriwira osalala, okhala ndi tsitsi la siliva.
Tiyi wosungidwa (Lǎo Chá, 老茶 — kuyambira zaka 3):

- Chenjezo: Osasiya tiyi “akuyandama” pakati pa kuthira.
Yínzhēn Wosungidwa (Lǎo Chá):
- Kutentha: 90–100 °C. Madzi otentha amatsegula bwino kuya kwa tiyi wosungidwa.
- Kuchuluka: 5–7 g pa 150–200 ml pa kuthira; 2–3 g pa 500 ml pa kuphika.
- Zotumizira: Gaiwan ya porcelain, ceramic yokhuthala. Ngati tiyi anasungidwa mu phukusi lothina kwanthawi yayitali — mupatseni mpweya kwa mphindi 10–20 asanakonze.
- Kachitidwe: Kuwotcha kwathunthu kwa zotumizira → kuthira → kutsuka mwachangu (5 sekondi) → kuthira koyamba 15–25 sekondi → kuthira 6–10. Zopangira za masamba zimatulutsa phukusi mwamsanga — yendetsani nthawi.
- Kuphika (煮茶): Makamaka kwabwino kwa Lǎo Chá wa zaka 5+. Thirani 2–3 g ndi madzi ozizira (500 ml), wiritsani, mphikeni kwa mphindi 3–8 pa moto wochepa. Zimatsegula kukhuthala kwakukulu ndi mbiri ya “uchi”.
Madzi pa Yínzhēn aliyense: Ofewa kapena a mchere wapakati, opanda fungo lachilendo. Ubwino wa madzi pa tiyi woyera umaonekera kwambiri mwachangu — zokoma zilizonse “zowonjezera” zimawonekera nthawi yomweyo mu phukusi losalala.
10. Kusunga:

- Chinyezi: Chofunika kwambiri. Chinyezi chokwera = chimera, acidity, fungo loipa — zolakwa zosatha. Chabwino — pansi pa 45–50%.
- Kuwunika: Kamodzi pa miyezi ingapo — kuyang’ana mawonekedwe ndi fungo.
Adani a tiyi (kwa njira zonse ziwiri): Kuwala, kutentha, chinyezi, kusintha kwadzidzidzi kwa kutentha, fungo lachilendo (zonunkhira, khofi, zofukiza, mankhwala a m’nyumba). Zopangira za masamba ndizosatetezeka kwambiri ku fungo.
11. Mtengo ndi Zofaki:
Báiháo Yínzhēn ndi imodzi mwa tiyi zodula kwambiri padziko lapansi pa unit ya kulemera. Zifukwa za mtengo: nyengo yaifupi, zopangira za “masamba okha” (20,000–40,000 pachilogramu), kuthyola kwa manja, terroir yochepa. Malinga ndi GB/T 22291-2017, gulu lapadera — ~1500 yuan/500 g ndi kuposa pamenepo, loyamba — ~900 yuan/500 g.
