- Madzi: ofewa kwambiri — achikasu, ndi kawonekedwe koserebata; owonekera.
- Masamba pambuyo pophikira: amatseguka pang’onopang’ono; fungo loyera, “la m’munda,” popanda kununkha kwa chimbudzi.

10. Kusunga:

- Kupanga Yínzhēn kumafuna masamba aang’ono ochuluka kwambiri, chifukwa chake tiyi nthawi zambiri amakhala okwera mtengo kuposa Bái Mǔ Dān ndi Shòu Méi.

15. Kukanikiza ndi Kukalamba:
Tiyi woyera ndi umodzi mwa tiyi ochepa achi China omwe amapezeka mwachuluka mu mawonekedwe osakanizidwa komanso oponderezedwa (ma pancake, njerwa).

Chikhalidwe chimodzi: kusunga kouma ndi kusowa kwa fungo. Posunga monyowa, “zaka” zimasanduka cholakwika (nkhungu / acidity).
17. Momwe Mungasankhire Gulu Labwino:
Posankha tiyi woyera, ndi kothandiza kumvetsetsa pasadakhale, mtundu wanji womwe mukufuna: “kuwonekera kwa masika” (Xīn Chá) kapena kuzama kwa uchi-zipatso zouma (wokalamba). Kenako — onani gulu ngati chinthu choyambira, osati ngati nthano yokongola.

18. Madzi ndi Ziwiya:

Madzi
- Ofewa kapena apakati pa mineralization nthawi zambiri amagwira ntchito bwino. Madzi olimba kwambiri amatsekereza kutsekemera ndi kupangitsa madzi kukhala okhwima, pomwe osauka kwambiri m’ma mineral amatha kupereka “chosalala.”

- Masamba aang’ono ndi tiyi woyera wosalimba kwambiri (mtundu wa Yínzhēn): 70–80 °C.
- Masamba aang’ono + masamba (mtundu wa Bái Mǔ Dān): 80–90 °C.
- Masamba ndi oponderezedwa (Gōng Méi/Shòu Méi, ma pancake): 90–100 °C.
2) Mlingo
- kwa kuphika: 5 g pa 150–200 ml — chitsogozo chokwanira;
- ngati kukoma kulibe — wonjezerani 1–2 g; ngati kuli kokhuthala kwambiri — chepetsani.
3) Nthawi
- yambani ndi 10–20 masekondi, kenako wonjezerani;
- ngati kuwawa kumawonekera — chepetsani kuphika koyamba ndi/kapena chepetsani kutentha.
4) Pamene kuphika kuli koyenera
- nthawi zambiri — kwa tiyi woyera wokalamba ndi wamasamba;
- ngati tiyi ndi woponderezedwa, kuphika kumapereka mbiri yofanana ya “compote” ndi kutsekemera kwakukulu.
