Bái mǔdān xīn chá · 白牡丹新茶

Bái Mǔdān Xīn Chá — tiyi watsopano wa peony woyera: tiyi woyera wa nyengo ino wochokera ku kaphukira ndi masamba apamwamba. 9. Kupanga:

  • Kutentha kwa madzi: 80–90 °C.
  • Mlingo: 4–6 g pa 150–200 ml.
  • Zosintha: masekondi 10–20 pakutha koyamba, kenako muwonjezere; mutha kusintha 6–8.
  • Chotengera: gaiwan kapena kapu yaying’ono ya porcelain / ceramics.
  • Mfundo yapadera: Bái Mǔdān imakonda madzi otentha pang’ono kuposa Yín Zhēn; ngati simutero, kukoma kungakhale “kochepa”.

10. Kusunga:

Tiyi woyera amatengeka ndi chinyezi ndi fungo lina lililonse.

  • Chotengera: chotseka mwamphamvu (botolo, thumba la zip, kapena thumba la chitsulo), lopanda zinthu zonunkhira.

  • Malo: owuma, ozizira, opanda kuwala, popanda kusintha kutentha kwakukulu.

  • Kusankha: ngati mukufuna “masika” — tengani watsopano; ngati mumakonda mtundu wa compote wotentha — funani wosungidwa wa zaka 3+.

14. Zolakwa popanga ndi posunga:

Ngakhale tiyi woyera wabwino amatha “kupangitsa kusakoma” ndi luso.

  • Madzi otentha kwambiri pa mitundu yofewa: tiyi wa ziphuphu (makamaka Yín Zhēn) ukapangidwa ndi madzi owiritsa amataya fungo lamaluwa ndi kuyamba kukwinyata.
  • Kutentha koyamba kwautali: tiyi woyera amatuluka pang’onopang’ono; ndibwino kusintha kwakanthawi ndikuwonjezera nthawi.

  • Kusunga pafupi ndi zinthu zonunkhira: tiyi woyera amatenga “funso” la kukhitchini, zokometsera, ndi mankhwala apanyumba mofulumira.
  • Kusokoneza “watsopano ndi wosungidwa”: kuyembekezera kuti tiyi woyerawake wakale adzakhala ndi “udzu wa masika” ndikulakwitsa; phindu lake ndi uchi, zipatso zouma, ndi kukhwima kofewa.

  • Kukoma: kuphinya kumakhala ndi kukhwima kwa “compote” kokulirapo komanso kochepa fungo lakuthwa.

Wosalala vs Wophwanyidwa — chimene mungasankhe:

  • Wosalala ndi wabwino ngati mukufuna fungo lambiri pompano (makamaka kwa tiyi wa ziphuphu ndi watsopano).
  • Wophwanyidwa ndi wosavuta ngati mukukonza kusunga, kuyembekezera, kuphika, kapena kumwa tiyi pafupipafupi m’magawo akulu.

  • mzere wa zipatso zouma umakula, mawonekedwe a udzu ndi zokometsera amayamba kuonekera;
  • magulu a masamba (Shòu Méi) amakhala “a compote” kwambiri.

Zaka 7+

  • mawonekedwe amakhala otentha komanso akuya: udzu wouma, mtengo, mahedi / mphesa zouma;
  • tiyi nthawi zambiri amayenera kuphika.

Chikhalidwe chimodzi chokha: kusunga kowuma komanso opanda fungo. Posunga m’malo achinyezi, “ukalamba” umasanduka cholakwika (kuphula / acidity).

17. Momwe mungasankhire gulu labwino:

Posankha tiyi woyera, ndi bwino kumvetsetsa kaye kalembedwe kamene mukufuna: “kuwala kwa masika” (Xīn Chá) kapena kuya kwa uchi ndi zipatso zouma (wosungidwa). Kenako — yang’anani gulu ngati chopangidwa kuchokera ku chiyambi, osati ngati nthano yokongola.

1) Yang’anani zomwe zalembedwa:

3) Kuyesa mwachangu mu chakumwa:

  • Kuwala kwa chakumwa: tiyi woyerabwino nthawi zambiri amapereka chakumwa choyera, chosakhala chiseyeye.
  • Kukoma kotsalira: kuyenera kukhala kotsekemera ndi kwautali, popanda acidity yosasangalatsa kapena “zodetsa”.

4) Kwa tiyi woyerawake wosungidwa (Lǎo Chá):

  • funsani / onani momwe tiyi idasungidwira (mowuma, popanda fungo);
  • pewani magulu okhala ndi kuphula, kukoma kwa acidity, kununkhira konyowa — ichi si “nkhani yamankhwala” koma cholakwika cha kusungira.

Mfundo yaikulu: ndi bwino kusankha tiyi ndi chiyambi chomveka ndi fungo loyera, kusiyana ndi tiyi “wakale kwambiri” ndi mbiri yosamveka.

18. Madzi ndi zotengera:

Ubwino wa madzi ndi zotengera umawonekera kwambiri pa tiyi woyera: iye ndi wofewa, ndipo zokoma zilizonse “zowonjezera” zimaonekera nthawi yomweyo.

Madzi:

  • Madzi ofewa kapena okhala ndi mchere wapakati nthawi zambiri amagwira ntchito bwino kwambiri. Madzi okhwima kwambiri “amaphimba” kutsekemera ndi kupangitsa chakumwa kukhala chokhwima, pomwe madzi opanda mchere okwanira amatha kupangitsa “kupanda kanthu”.
  • Ngati palibe njira yoyezera mchere, tengani mfundo yosavuta: madzi akumwa omwe amakoma okha nthawi zambiri amayeneranso tiyi.
  • Fungo la madzi (chlorine, “pulasitiki”, chitsulo) limasamukira ku chakumwacho nthawi yomweyo. Sefa kapena kuusiya madzi kutha kuthana ndi vutoli.

Zotengera:

  • Kwa tiyi watsopano (Xīn Chá), porcelain kapena galasi ndi bwino kwambiri: izo sizitenga fungo.

  • tenthetsani gaiwan / kapu ya tiyi wosungidwa (kwa watsopano, kutenthetsa pang’ono);
  • musasiye tiyi “akusambira” m’madzi pakati pa kusintha;
  • ngati tiyi ndi wophwanyidwa — mupatseni nthawi kuti afutukuke, osakanikiza ndi mpeni kukhala fumbi: zidutswa zimabweretsa kukoma kowawa.

19. Chidule chachangu cha kupanga:

Pansi pano pali chidule chachifupi chomwe chimathandiza “kupeza kukoma” mwamsanga ngakhale popanda kuyesa kwambiri. Gwiritsani ntchito ngati chiyambi ndipo kenako sinthani malinga ndi gulu lenileni.

1) Kutentha:

  • Tiyi wa ziphuphu ndi wofewa kwambiri (mtundu wa Yín Zhēn): 70–80 °C.
  • Kaphukira + masamba (mtundu wa Bái Mǔdān): 80–90 °C.
  • Tiyi wa masamba ndi wophwanyidwa (Gōng Méi/Shòu Méi, mablin): 90–100 °C.

2) Mlingo:

  • posintha: 5 g pa 150–200 ml — chitsogozo chogwirizana;
  • ngati kukoma nkopanda kanthu — onjezani 1–2 g; ngati ndi kolemera kwambiri — chepetsani.

3) Nthawi:

  • yambani ndi masekondi 10–20, kenako muwonjezere;
  • ngati kuwawa kukuwonekera — chepetsani masinthidwe oyamba ndi/kapena chepetsani kutentha.

4) Pamene kuphika kuli koyenera:

  • nthawi zambiri — kwa tiyi woyerawake wosungidwa ndi wa masamba;
  • ngati tiyi ndi wophwanyidwa, kuphika kumapereka mtundu wa “compote” wofanana ndi kutsekemera kwakukulu.

5) Cholakwa chachikulu: Tiyi woyerawake amatha kutenthedwa kwambiri (ndipo ndiye amakhala okhwima), kapena kusakwane kutentha kwa tiyi wosungidwa / wophwanyidwa (ndipo ndiye amakhala opanda kanthu).

20. Kulawa ndi kuunika:

Ngati mukufuna kuyerekezera magulu ndikumvetsetsa dera/zaka, ndi bwino nthawi zina kupanga tiyi woyerawake monga “pamsonkhano wolawa”.

Ndondomeko yochepa (cupping ya pakhomo):

  1. Tengani magulu awiri ndipo apangeni mu chotengera chofanana (magaiwan awiri ofanana kapena magalasi).
  2. Gwiritsani ntchito madzi, mlingo, ndi kutentha kofanana.
