Tiyi Wokalamba wa Pioni Yoyera (白牡丹老茶, bái mǔdān lǎo chá) ndi tiyi woyera wokalamba wa "pioni yoyera". 5. Njira ya Kupanga:

6. Makhalidwe a Kununkhira ndi Kulawa:

7. Kapangidwe ka Mankhwala:

Kusungitsa kwa tiyi woyera ndi kusanduka kosachedwa kwachilengedwe (okosijeni, kuphatikizana ndi kusanduka kwa mafuta). Ndikofunika kuzindikira: kusanduka kwenikweni kumatengera zomwe tiyiyo anatola, maonekedwe (wosasakaniza/woponderezedwa), chinyezi komanso kutentha kwasungidwira.

Zomwe zimachitika nthawi zambiri kwa tiyi woyera wokalamba:

  • madzi a tiyi amene anali oyera amayamba kukhala agolide-amber;
  • zonunkhira zatsopano za “zobiriwira” zimasanduka uchi, zipatso zouma, udzu zonunkhira, ndi kununkhira kwamtengo pang’ono;
  • kuwawitsa kophwephwetha kumachepa, kukoma kozungulira ndi kothina kumawonjezeka chifukwa cha kuchuluka kwa zinthu zomwe zaphatikizana za phenolic ndi kuchuluka kwa kutulutsidwa;
  • m’matayi omwe ali ndi masamba akulu ndi timitengo (mwachitsanzo, Shou Mei), zinthu za pektini ndi kutsekemera kwa “kompoti” zimadziwika kwambiri, makamaka ngati tiyiyo yaphikidwa.

Tiyi woyera amalemekezedwa chifukwa cha kusamalidwa bwino: masamba amene anatola samakandiridwa komanso kuwothawotha kwambiri, choncho m’madzi a tiyi mumasunga zinthu zachilengedwe za masamba.

  • Polifenolo (kuphatikizapo ma catechini): zimapatsa mphamvu ya antioxidant ndi kuwawitsa pang’ono.
  • Ma amino asidi (kuphatikizapo L-theanine): amapatsa kutsekemera, kofewa ndi kumva “umami”.
  • Kafeini: nthawi zambiri amagwira ntchito mofewa kuposa tiyi wobiriwira ndi wakuda, koma mulingo wake umatengera kuchuluka kwa mphukira ndi ubwino wa masamba.
  • Zinthu zonunkhira: m’tayi wachinyamata zimanunkhira maluwa akuthengo, udzu watsopano, apulo wobiriwira; pokalamba zimasanduka uchi, zipatso zouma ndi udzu.
  • Pektini ndi shuga wopasukila m’madzi: amawonjezera “kuwoneka kwansalu” ndi kuzungulira kwa kukoma (makamaka m’mitundu ya tiyi yomwe ili ndi masamba ndi timitengo tambiri).

8. Ubwino Wake:

Tiyi woyera mwamwambo amawaikira m’gulu la zakumwa zochepetsa kutopa bwino komanso zomwe zili ndi mphamvu zambiri zoteteza thupi (antioxidants). Panthawi yomweyo, tiyi si mankhwala, ndipo “mankhwala” aliwonse ofotokozedwa m’malonda ayenera kumvesedwa ndi maganizo osakondera.

Kulimbikitsa kumene kungathandize (pokamwa mwa kanzere):

  • Chitetezo cha antioxidant: polifenolo amathandiza kuchepetsa kupsinjika kwa okosijeni.
  • Kukhalitsa mwamphamvu popanda “kutentha”: kuphatikiza kafeini ndi theanine kumapatsa ambiri kuganiza bwino.
  • Kuthandizira kugaya chakudya: madzi a tiyi ofunda amadziwika kuti amakhala osangalatsa pambuyo pa chakudya (makamaka tiyi woyera wokalamba).
  • M’kamwa: kumwa tiyi pafupipafupi kungathandize kuyeretsa m’kamwa chifukwa cha polifenolo.

Zochita:

  • ngati muli ndi vuto la kafeini, musamwe tiyi woyera usiku kwambiri;
  • ngati muli ndi matenda a m’mimba ndi m’mimba, kapena ngati muli ndi pakati, mufunse dokotala musanayambe kumwa.

9. Njira Yopangira:

  • Kuphika (posankha): ndikoyenera makamaka kwa Shou Mei ndi Bai Mudan wokalamba. Ikani tiyi m’madzi ozizira, pitilizani kuphika, ndipo kenaka phikani ndi moto pang’ono kwa mphindi 3–8. Sinthani m’mene mukufunira.

  • Chomwe chimafunika kudziwa: ngati tiyi anasungidwa kwa nthawi yaitali m’matumba othina, amusiyeni “apume” kwa mphindi 10–20 asanathere.

      **Malangizo ofunikira:** Bai Mudan wokalamba amasonkhananso kukoma kothina ngati mutenthetsa mwachidule teapot/gaiwan ndi madzi otentha.

10. Kusunga:

Kusamba kwa tiyi woyera kumatheka monga wosasakaniza komanso woponderezedwa. Cholinga chachikulu ndi malo owuma osasuntha.

  • Chinyezi: pewani malo amvula (chinyezi chambiri = chiopsezo cha mafangasi).

  • Chidebe: posungira kwa nthawi yaitali, nthawi zambiri amasankha mapepala ophimba + bokosi/chidebe, kapena zotengera zopumira. Posunga m’nyumba, zotengera zotsekeka ndizomwe zimaloledwa, koma tiyi amakalamba pang’onopang’ono.

  • Kutentha: kutentha kwachipinda, popanda kutentha kwambiri ndipo osadzizindikira ndi dzuwa.

  • Fungo: musapeze zonunkhira, zokometsera, mafuta kapena zinthu zina zotsuka pafupi.

  • Kufufuza: mwezi uliwonse pang’ono musamalire tiyi (makamaka woponderezedwa) poyang’ana ndi kumva fungo.

      **Ngati tiyi ndi woponderezedwa:** musungeni m'njira yoti asapeze chinyezi. Ngati mukukayika, sankhani zotengera zokhazikika.

11. Mtengo ndi Zopeka:

Mtengo wa Bai Mudan wokalamba umatengera zaka, chiyambi, ndi khalidwe la kusungidwa. Zomwe zimapatsa mtengo wopambana si chaka chomwe chalembedwa, koma kuyera kwa fungo ndi kufanana kwa madzi a tiyi.

    Pa mtengo wa tiyi woyera, zokhudza kwambiri ndi **mtundu wa zomwe anatola**, kutola ndi manja, nyengo ya mwezi umene anatolera, mbiri ya wopanga ndi "kuyera" kwa chiyambi (mudzi/phiri lenileni).

Zomwe zimachitika kawirikawiri:

  • kusintha zopangira (mwachitsanzo, “singano zasiliva” zochokera ku mphukira zolimba kapena kuchokera kudera lina);
  • kuonjezera fungo (ngati tiyi amanunkhira “mafuta onunkhira”, vanilini kapena zipatso zowala — khalani tcheru);
  • kuwumitsa kwambiri/kutentha kwambiri (amabisa zolakwika za zopangira, amapatsa zipatso zowotcha ndi kusweka);
  • nthano zakutsatsa m’malo mwa deta yomveka: chaka chotolera, dera, mtundu wa tchire, njira yopangira.

Zomwe zimathandiza posankha:

  • mfundo zomveka za zomwe zinatolatola ndi dera;
  • masamba owuma okhala wathunthu, opanda fumbi ndi zing’onozing’ono;
  • fungo loyera lopanda fungo lam’kati kapena “lamvula” (kwa tiyi wokalamba — ndilololedwa kukhala ndi fungo lofewa la matabwa ndi udzu, koma osati mafangasi).

12. Zochititsa Chidwi:

  • Bai Mudan wokalamba ndi imodzi mwa tiyi yabwino kwambiri yophikira: amapereka madzi a tiyi othina popanda kuwawa koopsa.
  • Bai Mudan wabwino wakale nthawi zambiri amamukonda ngati “tiyi watsiku ndi tsiku” pa nyengo yozizira.
  • Ngati mukufuna kuphunzira kusunga tiyi kwa nthawi yaitali, Bai Mudan ndiyabwino kuposa Yin Zhen: amalekerera zolakwa zazing’ono m’mene amasungidwira ndi kupangidwira.

13. Kufanizira: Bai Mudan wokalamba ndi Shou Mei wokalamba:

  • Bai Mudan: kusiyanitsa pakati pa “kutalika” (kununkhira) ndi “thupi” (kukoma), uchi/zipatso zouma/udzu.
  • Shou Mei: nthawi zambiri amakhala wamphamvu ndi “wamakomwe”, wokhala ndi mzere wogwira wa zipatso za mkanjo ndi shuga, amakonda kwambiri kuphika.
  • Chisankho: ngati mukufuna kukoma ndi kuchita zosiyanasiyana — sankhani Bai Mudan; ngati mukufuna kumwa kothina kwambiri — sankhani Shou Mei.

14. Zolakwitsa pa Kapangidwe ndi Kusunga:

Ngakhale tiyi woyera wabwino amatha kukhala “wosakoma” chifukwa cha njira yosayenera.

  • Madzi otentha kwambiri kwa mitundu yofewa: tiyi yopangidwa ndi mphukira (makamaka Yin Zhen) ikathira madzi otentha kwambiri imasiya kununkhira maluwa ndipo imatulutsa kuwawa kolimba.
  • Kuthira kwa nthawi yaitali koyamba: tiyi woyera amayamba kutseguka pang’onopang’ono; ndikwabwino kuthira mwachidule ndiyeno kuwonjezera nthawi.
  • Kusatenthetsa mokwanira tiyi wokalamba ndi woponderezedwa: mosiyana ndi zimenezi, tiyi wakale ndi woponderezedwa molimba nthawi zambiri amafuna 95–100 °C, apo ayi kumwa kumakhala kopanda phindu.
  • Kusunga pafupi ndi mafunngo: tiyi woyera amatenga msanga fungo la khitchini, zokometsera, ndi zotsukira.
  • Kusokoneza “watsopano ndi wokalamba”: kuyembekezera kuti tiyi wakale anena “zobiriwira zam’masika” — ndi kulakwitsa; kukoma kwake kuli mu uchi, zipatso zouma ndi kuthina kofewa.

Ngati kumwa kukuwoneka kopanda kanthu — yesani:

  • kuonjezera mlingo ndi 1–2 g;
  • kukweza kutentha ndi 5 °C (kapena kutsitsa ngati tiyi ndi wa mphukira);
  • kufupikitsa nthawi ya kuthira koyamba ndikupatsa nthawi yochuluka yothirana motsatizana.

15. Kuponderezedwa ndi Kusungitsa:

Tiyi woyera ndi imodzi mwa mitundu yochepa ya tiyi ya ku China yomwe imapezeka kwambiri monga wosasakaniza komanso woponderezedwa (zibilibili, nsapato).

Chifukwa chiyani amapondereza tiyi woyera:

  • Kulondola posunga ndi kutumiza: phiri lochepera, zing’onozing’ono zochepa.
  • Kusunga mofanana: tiyi woponderezedwa amakalamba pang’onopang’ono ndipo nthawi zambiri amakhala “wosonkhanitsa” chifukwa masamba sakhudza kwambiri mpweya.
  • Kukoma: tiyi woponderezedwa nthawi zambiri amakhala ndi kuthina kwa “kompoti” ndipo amachepetsa kununkhira kwapamwamba.

Wosasakaniza ndi woponderezedwa — choti musankhe:

  • Wosasakaniza ndi wabwino ngati mukufuna fungo lalitali pakadali pano (makamaka tiyi ya mphukira ndi yatsopano).
  • Woponderezedwa ndi wabwino ngati mukukonzekera kusunga, kukalambitsa, kuphika kapena kumwa tiyi mowirikiza.

Momwe mungachotsere tiyi pa bilibili:

  • Gwiritsani ntchito mpeni wocheperako/ndodo yotsekemera ndipo gwirani ntchito m’mizere, osasandutsa tiyi kukhala fumbi;
  • ngati kudindidwa ndikolimba kwambiri, mungaiyisiyitsa “kupumula” itatha kutsegulidwa kwa masiku 1–2 m’malo owuma osalowerera ndale — masamba amakhala osalala;

16. M’mene tiyi amasinthira ndi nthawi:

Kusungitsa kwa tiyi woyera sikufunika kukhala kwa “zaka makumi”. Ngakhale m’malo a m’nyumba, kusanduka kumawoneka msanga.

Miezi 0–12 (kutchedwa “Xīn Chá”)

  • Zonunkhira zazikulu ndi maluwa, udzu watsopano, udzu;
  • madzi a tiyi amakhala oyera;
  • kuthira kofewa ndi nthawi zochepa (makamaka kwa Yin Zhen) kuli bwino.

Zaka 1–3

  • Zobiriwira zatsopano zimakhala zosavuta;
  • Uchi wambiri, khungu la zipatso zimawonekera;
  • Kukoma kumazungulira, kuwawitsa kophwephwetha kumachepa.

Zaka 3–7 (nthawi zambiri zomwe msika umatcha “Lǎo Chá”)

  • Madzi a tiyi amadetsedwa kwambiri kukhala agolide-amber;
  • Zonunkhira za zipatso zouma zimakula, udzu ndi zonunkhira zozizwitsa zimawonekera;
  • Magulu a masamba (Shou Mei) amakhala “okoma ngati kompoti”.

Zaka 7+

  • Mbiri yake imakhala yofunda komanso yozama: udzu wowuma, mtengo, mkanjo/mphesa;
  • Nthawi zambiri tiyi amayenera kuphikidwa.

Mkhalidwe umodzi: kusunga kowuma komanso popanda mafunngo. Posunga m’mvula, “zaka” zimasanduka cholakwika (mafangasi/kutsuwa).

17. Momwe mungasankhire gulu labwino:

Posankha tiyi woyera, ndikofunika kumvetsetsa kale mtundu womwe mukufuna: “kutuluka kwa masika” (Xīn Chá) kapena kuzama kwa uchi ndi zipatso zouma (tiyi wokalamba). Kenako — fufuzani gulu ngati chinthu cha chiyambi, osati nthano yokha.

1) Fufuzani zomwe zinalembedwa:

  • Chaka ndi nyengo: tiyi woyera ndi chakumwa cha nyengo. “Masika” nthawi zambiri amakhala ndi fungo labwino, “chilimwe/m’dzinja” — amakhala othina komanso a udzu.

  • Gulu la zopangira: Yin Zhen / Bai Mudan / Gong Mei / Shou Mei (kapena chofanana). Izi ndizowona kuposa “premium” yosamveka.

2) Yang’anani masamba owuma:

  • Kukwanira: zing’onozing’ono zochepa ndi fumbi, gawo losamalidwa.
  • Kufanana: kukula ndi mtundu wofanana — chizindikiro cha kusanja kokhazikika.
  • Fungo: loyera, lopanda “m’pinda”, chinyezi, mankhwala ndi mafuta onunkhira.

3) Mayeso ofulumira m’madzi a tiyi:

  • Kuwala kwa madzi a tiyi: tiyi woyera wabwino nthawi zambiri amapereka madzi a tiyi oyera, osalefuka.
  • Kukoma kotsalira: kuyenera kukhala kotsekemera komanso kwaitali, popanda asidi wosasangalatsa ndi “litsiro”.

4) Kwa tiyi wokalamba (Lǎo Chá):

  • funsani/onetsetsani mmene tiyi anasungidwira (kowuma, popanda mafunngo);
  • pewani magulu okhala ndi mafangasi, katsitsumzukwa, mafunngo — izo si “nthano yachipatala” koma cholakwika cha kusunga.

Mfundo yayikulu: ndikwabwino kusankha tiyi yemwe ali ndi chiyambi chodziwika ndi fungo loyera, kuposa tiyi “wakale kwambiri” wokhala ndi mbiri yosamveka.

18. Madzi ndi zida:

Ubwino wa madzi ndi zida umawoneka kwambiri pa tiyi woyera: ndiwosavuta, ndipo zinthu zina zosayenera zimawonekera msanga.

Madzi

  • Madzi ofewa kapena amchere ochepa nthawi zambiri amagwira ntchito bwino. Madzi olimba kwambiri “amakuta” kutsekemera ndikusandutsa madzi a tiyi kukhala okhwima, pomwe osauka mchere angabweretse “kupanda kanthu”.
  • Ngati mulibe njira yoyesera mchere, tsatirani mfundo yosavuta iyi: madzi am’mimba omwe amakoma okha nthawi zambiri amayeneranso tiyi.
  • Mafunngo a madzi (chlorine, “pulasitiki”, chitsulo) amalowa msanga m’madzi a tiyi. Fyuluta kapena kuwailkira nthawi zambiri amathetsa vutoli.

Zida

  • Kwa tiyi woyera watsopano (Xīn Chá) zida zabwino kwambiri ndi feyifulu kapena galasi: sizilowerera ndipo “siziba” fungo.

19. Kukumbukira mwachidule zamakonzedwe:

Pansipa pali makonzedwe ofupikitsa omwe amathandiza kuti mukomere mwachangu popanda kuyesa kwa nthawi yaitali. Gwiritsani ntchito ngati poyambira ndipo kenako sinthani malinga ndi gulu lenileni.

1) Kutentha:
