- Mtundu / Kultivar: Zipangizo zazikulu ndi masamba a mitundu ya magulu a Anhua (安化群体品种, Ānhuà qúntǐ pǐnzhǒng), makamaka Yuntai Mountain Daye Zhong (云台山大叶种, Yúntáishān Dàyè Zhǒng) — gulu la masamba akulu, lomwe linavomerezedwa mu 1965 ngati m’modzi mwa mitundu yoyamba 21 ya tiyi wapamwamba wa dziko (nambala GS13024-1985). Kuchokera pa ichi, mitundu itatu yosankhidwayi yabwino ya dziko inatulutsidwa: Zhuye Qi (槠叶齐, Zhūyè Qí), Baimao Zao (白毫早, Báimáo Zǎo), Xiangbo Lü (湘波绿, Xiāngbō Lǜ). - Kusonkha: Kusonkha kumachitika kuyambira pakati pa Epulo (mozungulira nyengo ya Guyu — 谷雨, Gǔyǔ, “Mvula ya Mbewu”) mpaka kumayambiriro kwa Meyi. 4. Terroir ndi Makhalidwe a Kulima:
- Maonekedwe a nthaka ndi malo. Chigawo cha Anhua chili m’mphepete mwakumpoto kwa phiri la Xuefeng (雪峰山脉, Xuěfēng Shānmài), pakati pa mtsinje wa Zi. 5. Luso la Kupanga:
Kupanga Tiān Jiān kumaphatikiza magawo awiri otsatizana: kupanga māo chá wakuda (黑毛茶, hēi máochá — “kukonza koyamba”, 初制, chūzhì) ndi kukonza komaliza (精制, jīngzhì). Gawo I. Kupanga māo chá wakuda (初制):
- Kusonkha (采摘, cǎi zhāi). Masamba a kalasi yoyamba (一芽二三叶) amasankhidwa pamanja m’nthawi ya Guyu.
- Shāqīng — “kupha zobiriwira” (杀青, shā qīng). Kuwotcha pa kutentha kwakukulu mu wok kapena pa ng’oma ya makina. Popeza zipangizo za hēi chá ndi zazikulu kuposa za tiyi wobiriwira, nthawi zina madzi amawazidwa pamwamba pa masamba asanawotche. Cholinga ndi kuletsa ma enzyme osasunga chinyezi chotsalira kuti apese pambuyo pake.
- Kupotoza koyamba (初揉, chū róu). Masamba otentha pambuyo pa shāqīng amapotozedwa pamanja kapena pa makina, ndikupanga mizere yotalikilapo (条形, tiáo xíng) ndikutulutsa madzi a maselo pamwamba. Ndikofunika kuti musalekanitse thupi la tsamba ndi mitsempha, apo ayi pamakhala chilema chotchedwa “sponji” (丝瓜瓤).
- Wòduī — kuunjika konyowa (渥堆, wò duī). Masamba opotozedwa, osawamasula, amaikidwa mu mulu wa 66–100 cm wamtali, ndikuphimbidwa ndi nsalu yonyowa. Zinthu: kutentha kwa chipinda ~25 °C, chinyezi ≥ 85%, chinyezi cha zipangizo za tiyi ~65%. Nthawi — maola 18–24. Kupesa kumakhala kokwanira pamene masamba atembenukira ku mtundu wa chikasu-bulauni, fungo la “wobiriwira” limazimirira, ndipo fungo lokoma ngati la mowa wopangira (甜酒糟香, tián jiǔzāo xiāng) limatuluka, ndipo tsamba likawonekera pakuwala limakhala lowoneka ngati nsungwi wobiriwira.
- Kupotoza kachiwiri (复揉, fù róu). Pambuyo pa wòduī, masamba amamasulidwa pang’ono ndikupotozedwanso kuti awumitse mawonekedwe ndikukwaniritsa kuwonongeka kwa maselo mpaka ≥ 30%.
- Kuyanika pa Ng’anjo ya Nyenyezi Zisanu ndi Ziwiri (七星灶松柴明火干燥, Qī Xīng Zào sōng chái míng huǒ gānzào). Gawo II. Kukonza komaliza (精制):
- Kusefa ndi kusanja (筛分拣剔, shāi fēn jiǎn tī). Māo chá amasefa ndi ma sieve, magawo opepuka amalekanitsidwa ndi makina owuzira, ndipo masamba osayenera ndi zinthu zina zimachotsedwa pamanja. Kwa Tiān Jiān, māo chá wapamwamba amasankhidwa ndi gawo laling’ono lachiwiri.
